Description
Mecanova develops primary cuts both industrial and low yields.

We can distinguish two basic types of cutting according to the cutting position.

1. Vertical (for pigs andcattle).
   Is done directly on the half carcass hanging from the carrier or route, dropping the pieces on tables or tape collection.
2. Horizontal (especiallyfor pigs)
   Through a descender a cutting table, the average channel lies on a table to separate:

• Ham
• The palette
• The loin
• The rack

The primary parts are automatically routed to its line of secondary cutting or boning.

1. Primary cutting on table
2. Primary cutting line

Effectiveness: This system can be increased by 30% yield.
Quality: Improved product quality because the work is more repetitive.

3.Primary cutting machine: A machine designed for high yields, so that the

cutting is performed by circular saws.
Not all courts allow this system is typical of the Danish court and this requires a low temperature of the carcass.
