Mecanova develops primary cuts both industrial and low yields.
We can distinguish two basic types of cutting according to the cutting position.
- Vertical (for pigs andcattle).
Is done directly on the half carcass hanging from the carrier or route, dropping the pieces on tables or tape collection.
- Horizontal (especiallyfor pigs)
Through a descender a cutting table, the average channel lies on a table to separate:
- Ham
- The palette
- The loin
- The rack
The primary parts are automatically routed to its line of secondary cutting or boning.
